    Direct from a farming friend in Thailand, we bring you this butterfly pea flower that creates a deep, dark blue hue.

    Blue Butterfly Pea Flower is commonly grown in Southeast Asia and used as an all-natural drink and food colouring. It has the interesting property of changing colour in drinks when something acidic (lemon, lime, tonic water, etc) is added to it. In Thailand where is is known as Anchan Nom Dok, it is often used for creative layered drinks or as a culinary application (blue sticky rice, cakes, breads, etc).

    Prep & usage

    Add 3-4 flowers to hot water for blue effect. The deep blue colour takes 5 minutes to brew, stirring occasionally will speed the process. Honey is often added to this as a beverage. Add lemon to change liquid to violet.

    It is possible to cold-brew this tea directly into liquids. Add 6-7 flowers per litre bottle. Leave overnight. Try it in clear alcohols (like gin or vodka) as an ingredient for color-changing cocktails.

    Natural colouring for food and beverages, such as frosting, ice cream, cocktails and tea drinks. This ingredient will not change the flavour of anything mixed with it.
