    This cheese was very nice — smooth, delicious, but quite mild to my taste.
    Maybe I should have left it for longer, as I like my cheese more and more mature as I age myself, but I couldn't wait.
    Savour served at room temperature with a light red wine and some sourdough bread. If you leave it to mature more, go for a stronger red wine :)
