In Greek, "fos" (???) means "light", the ever-present Greek light whose brilliance and luminosity have turned Greece into an iconic land. Inspired by the Greek light as it softly asserts its presence everywhere, Agrosparta named its product collection "Fos" to stress its authentic and traditional nature. This particular Agrosparta product features large, succulent, and flavorful green olives from the area of Chalkidiki. The growth of Chalkidiki olives is monitored every step of the way and their color depends on the ripening stage they're in and the time they are harvested. Next, they are hand-picked and packaged with extra care so that their premium sensory traits may remain intact. Once harvested, they are subjected to little processing as Agrosparta uses the old traditional way of preserving olives: in other words, the olives never undergo immersion in lye! Instead, they are pitted, then, patiently cured in natural brine (salt and water) for a 12-month period, a technique that has remained the same in households throughout the Greek countryside for hundreds of years. Agrosparta marinates its table olives in extra virgin olive oil, salt, and vinegar. At no stage of the production process are any chemicals or preservatives used.
