The entire production process follows the principles of a short, transparent and sustainable supply chain and each stage of processing organic olives takes place at a controlled temperature to safeguard the nutrients and polyphenols recommended for a healthy, balanced diet.

One day timeline: The production of oil begins at 7 am with defoliation and deramification and then proceeds to washing and pressing with millstones. The olive paste is pressed and reaches a maximum temperature of 26 degrees, after which it passes through the extractor from which the oil - now separated from the water - is obtained in its purest form. At 7 pm, stored in steel tanks under nitrogen, Cascavilla oil is ready to be packaged and enjoyed.
