Chocolate Puffin Eggs by The Chocolate Detective 150g

Brightly billed purring puffins are my favourite seabird with their cute, clown-like appearance. They pair up for life and raise just one precious Puffling a year. One of my secret haunts, Lundy Island in the Bristol Channel, takes its name from the Old Norse word for Puffin, and is an important breeding ground for these beautiful rare creatures.

These delicious eggs are made for us in France with a buttery salted caramel ganache, and the use of a touch of 'fleur de sel' salt in the caramel intensifies the flavour.
