Our Story

The Can-D Food Co. is a family-owned business using a unique process inspired by ancient Native American and Canadian First Nation methods of preserving salmon for hunting trips. We take the salmon, cut it into strips, dry cure it in salt and sugar, then brine it in maple syrup, honey, Demerara sugar and salt. Following this we air dry it and smoke it over old whisky barrels before cutting it up into golden nuggets of goodness.

Niall Carroll, founder of The Can-D Food Co., first discovered the delicacy whilst holidaying in Vancouver Island, British Columbia, where salmon has been a staple food source for its coastal First Nation for hundreds of years.

To preserve the catch, the First Nation tribes would smoke the salmon and combine salt and maple syrup to create a delicious, confectionery-like treat to eat throughout the long, harsh winter months.

Upon returning to the UK, Niall wanted to share his candied smoked salmon revelation with Europe and spent years testing and developing the perfect recipe with a backyard cardboard smoker.
