Compared to the other dried sausages on offer, this was slightly underwhelming. Some of the nuts used were a bit black and a fungus grew on the meat almost from the moment of opening it. The bits I did eat were very nice.
This walnut Saucisson has been produced using noble cuts from IGP Franche-Comté porks only. The casing is natural and it's handmade by a Maître Artisan following an entirely traditional process. The walnuts inside are the famous Grenoble walnuts. Perfect for the aperitif or as part of a light lunch platter.
The pigs are reared outside in the French countryside.
About Nitrates and Nitrites
Nitrites and nitrates are essential for both ensuring meat is cured fully and properly and also for allowing the complex flavours to develop. Much like sulphite is a natural and important part of wine-making - nitrites do the same job for charcuterie.
