We make our Sparkling Vintage Cider with a high proportion of dessert apples to give it that delicious 'Methode Traditionelle' taste. We don't use sulfites or preservatives. The apples are pressed, then fermented twice: first in the barrel for a year; then a second year's fermentation in the bottle. It is the secondary fermentation that gives our cider it's wonderful bubbly effervescence; a method invented in the West Country for fine cider making around 1600, well before it was used in France for Champagne.
<strong>About the Producer</strong>
Once upon a springtime the Fowey Valley was bedecked with apple blossom. The Victorians would take special boat trips just to marvel at the blooming. Today, Fowey Valley Cidery is one of the few orchards left in the valley. We keep busy upholding the tradition of making cider and producing award winning spirits from the cider too.
