Since James started his charcuterie business in 2005 at Trealy Farm where he lives, his passion has been about producing fine quality charcuterie from animals reared as locally as possible to the highest welfare standards. That drive is just as strong today. The business has evolved of course, but his commitment remains rooted in a genuine love of good food and its connection to the land. For the company, that means supporting free range production of traditional breeds fed natural feeds, and working closely with trusted farmers to sustain their production by ensuring they get a fair price for their animals.

Charcuterie production has a natural connection to the land and the seasons and our products are inextricably linked to the ‘terroir’ of their ingredients, making them unique.

About Nitrates and Nitrites
Nitrites and nitrates are essential for both ensuring meat is cured fully and properly and also for allowing the complex flavours to develop. Much like sulphite is a natural and important part of wine-making - nitrites do the same job for charcuterie. They exist in minuscule quantities and so long as you don't consume mountains of cured meats every single day then you can rest assured that consuming our meats will only provide you with positive health benefits such as a strong heart and a powerful mind.

We operate a two day delivery service, which means if your order is placed by 12 noon on Monday, this will be with you on Wednesday. Don't worry this doesn't mean your delivery will be stuck in a van for two days, it simply gives us the time to select, prepare and package your products properly with the care and attention they deserve. Orders received after 12 noon will be prepared and dispatched the following day.
We send goods by overnight carrier to destinations on the GB mainland only for a delivery by 16.00. We can deliver to your home or place of work, and to the home or work-place of your relatives, friends or colleagues. We must have a complete post code and telephone number for every delivery address. We can deliver on Tuesdays, Wednesdays, Thursdays and Fridays ONLY.
Because most of our products are perishable, we highly recommend that you provide us with an alternative delivery instruction for any private address; such as "leave in porch/on step/with a neighbour/behind the bins". Please send an email to firstname.lastname@example.org with your delivery instructions immediately after placing an order.
Please take great care when stipulating delivery locations, addresses and dates, because once these have been entered and you have received a confirmation email for your order, they cannot be changed.
