Bonajuto's chocolate is composed only of a mixture of cocoa, sugar and spices. The scent of their chocolate is believed to be beneficial in cases of bronchitis or general respiratory problems. Bonajuto chocolate is made with an ancient low temperature preparation method. This process dates back to the Aztec ritual tradition. It was brought to Modica (Sicily) in the sixteenth century by the Conquistadors.
Modica chocolate should be dark brown and its surface might appear mottled and matte due to cocoa butter blooming. As the cocoa used to make this chocolate does not go through conching or tempering, this is absolutely normal and not an indication of bad storage or bad tempering as in other kinds of chocolate.
Modica chocolate may exhibit colour variation or crystallization that looks like "cocoa butter blooming". This is a normal possible side effect of its low processed nature and the artisanal methods used to produce it. It is not an indication that the chocolate is damaged or was mis-tempered.

Prep & Usage
Consume in small pieces or dissolve in a cup of water or milk. Its low cocoa butter content makes it perfect for trying in combination with wines and spirits.
