Trofie are fine twirls of pasta which remain have a nice bite to them as they remain quite firm when cooked. They are a traditional pasta shape of the Liguria region and are generally eaten with pesto, another Ligurian speciality. Trofie are perfect for pesto as this type of sauce clings to them really well. They also pair well with all tomato-based sauces.
1 x Cavatelli Pasta 500g
Cavatelli are small pasta shells which resemble tiny hot dog buns. They originally come from the Molise region but are now commonly used all over Southern Italy. This type of pasta is very flexible and can be used with a variety of sauces. Popular accompaniments are thick, chunky tomato sauces, truffles, mushrooms, broccoli and rag'. 1 x Lagane Pasta 500g
Lagane are cut in the shape of a short, wide ribbon, similar to Tagliatelle but thicker, wider and shorter. Lagane is an ancient word which most historians agree is likely to be the origin of the modern Italian word Lasagna. This type of pasta is generally handmade and difficult to find in supermarkets. Lagane generally accompany chickpeas in most parts of Southern Italy. In Calabria the dish is known as Lagane e cicciaro (dialect for Lagane e ceci) and calls for dried chickpeas soaked overnight but of course can be made with the tinned variety if you are short on time.
