Direct from a farming friend in Thailand, we bring you this highly concentrated form of butterfly pea flower that brews into a deep, dark blue. This powder works instantly in hot beverages, much faster than steeping whole flowers. A pale dusty blue powder with small flecks of yellow and green. Smells of sesame seeds and tastes slightly of toasted nuts, but this will not change the flavour of anything mixed with it. The colour of this powder when added to liquid is an indigo blue and once lemon juice or other acidic liquid is added changes to a lavender colour. How to use:
Dissolve 1/4 teaspoon of tea powder into hot water for blue effect. Honey is often added to this as a beverage. Add lemon to change liquid to violet. Some sediment may remain. Natural colouring for food and beverages, such as frosting, ice cream, cocktails and tea drinks. Can be turned into ice and added to drinks for extra colour. The change of colour, once citrus is added, happens slower when it is ice. If you don't want to water down your cocktail, infuse with clear alcohol, such as Vodka, Tequila and Gin to give them the wonderful deep indigo hue. Add any citrus juice to make the liquid change to lavender. Can be used as a natural clothing dye, so avoid getting any on pale clothes.
