A round classic Sardinian oven baked crispbread, Carasau is considered one of the oldest recipes in the world. Also known as 'carta musica' in reference to the characteristic noise made when broken and chewed. Traditionally these crispbreads were carried by shepherds on their travels, being light, nutritious and oven baked in a way to stay fresh for a long period of time while away from home.
