Energizing and nutritious, buckwheat is available throughout the year and can be served as an alternative to rice or made into porridge.
While many people think that buckwheat is a cereal grain, it is actually a fruit seed that is related to rhubarb and sorrel making it a suitable substitute for grains for people who are sensitive to wheat or other grains that contain protein glutens. Buckwheat flowers are very fragrant and are attractive to bees that use them to produce a special, strongly flavoured, dark honey.
Commonly used in pancakes, buckwheat flour is a high fibre, high protein alternative to white flour. It is also higher in many essential vitamins and minerals than white flour. You can use buckwheat flour in place of white or whole-wheat flour in many recipes, including those for muffins, cookies and breads.
Buckwheat flour is not technically a wheat product, so many people with wheat allergies are able to use this flour. Provided it is processed separately from wheat products, buckwheat flour is also gluten free. If you cannot tolerate gluten, buckwheat flour can take the place of wheat flour in many of your recipes.
