History: "Nychteri" was traditionally named Santorini's wine, from overripe Assyrtiko grapes. It was the wine coming from the floating must of the wine-press, characterized of residual sugar and alcohol volume over 15%.
Vinification techniques: Typical, white vinification techniques, where fermentation and ageing take place in old, oak barrels. The wine remains on the lees and in old oak barrels for 2 years and 1 year in the bottle.
Tasting characteristics: Complex aromas (dried fruits, nuts, honey, herbs, minerality) in the nose, rich and velvety texture in the mouth. Pairs well with poultry, fish, sea food and many kinds of cheese.
