Quince jam is part of the typical Persian breakfast in Iran. It includes freshly baked warm bread (barbari, taftoon or sangak) straight out of the tanoor (clay oven), freshly brewed hot chai tea, sarshir (breakfast cream), panir (cheese), butter and honey.
Quince is one of the most underused and understated fruits. Often made into a jelly or chutney, the truly perfect use of this beautiful fruit is in the form of a preserve. The aroma that this jam produces will make you want to wake up extra early for breakfast and make any excuse for afternoon tea.
