At Close Leece Farm, our customers asked for a spicier chorizo so we created the extra picante. But some asked for an even spicier product. We experimented with some of the hottest chillis in the world and finally (after some pain!) settled on our ingredients. We start with the outright heat of the ghost chilli pepper and then complement that with the fruity inferno of the hottest chilli in the word – the carolina reaper. To this furnace we blend in arbol chilli to give greater depth to the flavour.

We specialise in making award-winning artisan charcuterie, handmade on the farm from our herd of pasture raised rare breed Pedigree Tamworth pigs and native Manx Loaghtan lambs. We make our charcuterie by hand on the farm, using the latest techniques to maintain the highest quality standards, but with an eye to traditional charcuterie making.
