    About Nitrates and Nitrites
    Nitrites and nitrates are essential for both ensuring meat is cured fully and properly and also for allowing the complex flavours to develop. Much like sulphite is a natural and important part of wine-making - nitrites do the same job for charcuterie. They exist in minuscule quantities and so long as you don't consume mountains of cured meats every single day then you can rest assured that consuming our meats will only provide you with positive health benefits such as a strong heart and a powerful mind.

    Prep & Usage
    Ready to eat. Cured meats taste best at room temperature. A little goes a long way. Packs containing sliced meats have obviously been prepared for you already. We suggest removing the meat from the packs and separating the slices when fridge cold, then allow a few minutes for them to come up to room temperature.

    Richard and Fionagh Harding are creating an inspiring artisan village on their farm near Bude, Cornwall - complete with baker, cheesemonger, and apple brandy distillery. At the heart of it is their Cornish Charcuterie business, which turns their own Lop pigs and Black Welsh Mountain sheep into beautiful charcuterie. Favourites of ours include the pork, cider and seaweed salami and the pink peppercorn.


    The best place to store cured and air these meats is somewhere that has a relatively cool temperature. Importantly, that space needs to be dry. If you don't have a suitable storage box, wrap the meat in wax paper or clingfilm.
