In the past, when there were no refrigerators and there was an excess amount of tomatoes harvested, people thought of preserving this surplus in what we now know as tomato sauce. The tomatoes were boiled and, with the addition of olive oil that served as a natural preservative, the tomatoes could be preserved for a much longer period. Nowadays, it has been scientifically proven that lycopene -one of tomato's antioxidant compounds- is found in higher concentration in cooked tomatoes. Tomatoes were first cultivated in Peru and then travelled on to Mexico. They reached Europe in the 16th century and came to Greece around the year 1800. The Mediterranean countries soon became familiar with the tomato, which is now a vital part of the Mediterranean diet.
