Tapenade is a rich and aromatic sauce that is delicious either swirled through paste, as a topping on bruschetta or even as an accompaniment to an antipasti platter of cold, meats and cheese.
This Kalamata Olive paste from Kakoulakis can be preserved for a long time in the refrigerator. The oil on top of the tapenade is “sealing” in the paste, preventing any air from getting through that could cause alterations to the flavour or texture.
