This is a top Persian dish, dating as far back as the Mesopotamian era! This is a simple dish packed with flavour, that not only satisfies hunger but warms the heart and soothes the occasional longing for home.
Probably the most hearty dish in our repertoire, this dish requires a long and slow cooking process. The closest dish you can compare this to is a beef bourguignon.
It relies on a fine mixture of spices and the ever versatile lentil, meaning you can have this dish as is or add chunks of brown meat to it that will give it that extra bit of substance. Decorated with thinly sliced fried off potatoes, this is a complete dish. Great for those cold winter days or just whenever you want a good nutritious meal in you.
Serves up to 4 people.
Prep & Usage
Cook off some meat (fish not suitable) until well sealed. Add the paste and water to cover and then add some dried limes. Cook on a low heat for up to 2 hours. Separately cook off some aubergines until soft and place on top of the stew. Finish by garnishing with fresh thinly cut potatoes that have been lightly fried off.
