Fillets from large Cornish cod are a real joy. From a sustainability perspective it is a bit of a minefield with Cod, but the Cornish fishery is well managed. It has the largest voluntary no catch zone around Trevose Head and we are proud to offer it.
COOKING TIP: Cod is the traditional fish for Fish and Chips but it really offers so much more. Large cod has wonderful flakes with a soft texture, and the skin when browned is delicious. We recommend oven baking with a garlic and herb crust and serving with minted mashed potatoes.
HEALTH FACT: Cod is a good source of Omega 3 oils with 342 mg per 100 g of fish
1kg Salmon Fillet:
When sourcing our salmon we have cast our net wide. We work closely with Shetlands Finest and they provide some of the finest salmon in the world. The conditions there are perfect for producing lean and fit fish and they stay in peak condition thanks to the strong, fast tidal flow of the local waters encouraging the fish to swim constantly. This gives a lovely firm flesh. The currents also maintain the cleanliness of the seabed and allow the salmon to grow both pure and natural without the aid of antibiotics, chemicals or growth hormones.
COOKING TIP: We recommend taking salmon fillet and using it as the main ingredient in a stir fry. In a deep pan or wok fry off some onions, peppers, mushrooms, garlic and chilli. Grill the salmon with a little olive oil and some seasoning and pre-cook the noodles. Add the cooked noodles and salmon just before serving for 2-3 minutes.
HEALTH FACT: Atlantic salmon is a superior source of Omega 3 delivering 2,380 mg per 100 g of fillet! It is also rich in Vitamin A & D and minerals including calcium.
1kg Pollack Fillet:
This beautiful green-bronze colouring makes this fish stunning and it rightly continues to grow in popularity. It is a great alternative to cod and can be used in the same way. Large quantities are landed around Cornwall and fresh fillets from large Pollack are delicious. It is also a very sustainable fish and recommended as a species we should be eating more of.
COOKING TIP: Basically anything you can do with Cod you can do with Pollack. The flesh is not quite as bright as cod, but in terms of both taste and texture they are very similar. I always use Pollack when making "proper fish fingers" for the family and fish and chips!
HEALTH FACT: There is approximately twice as much Omega 3 in Pollack as there is in Cod with 757 mg per 100g of fish
1kg Silver Mullet Fillet:
We class Silver Mullet a Mediterranean Fish, falling between oily and non-oily species. We are very fortunate to have large Silver Mullet landed along the south coast pretty much year round.
1kg Luxury Fish Pie Mix:
Large chunks of the finest fresh fish. Ideal for fish pies or fish cakes. No skin or bones. 1kg is 5-6 generous portions.
