    Epoisses is the cheese that made Gaugry cheese makers famous. Washed with Marc de Bourgone, it has a floral aroma, with a shiny and slightly wrinkled rind. Once aged it can be quite pungent with a smooth creamy texture.

    The Epoisses Gaugry has a slightly wrinkly appearance and the colour varies from ivory with orange hints to brick red and will depend principally on the maturing, with the use of any colourants being strictly forbidden. The cheese itself is pale beige in colour, with a smooth and creamy texture.

    The Fromagerie Gaugry began producing Epoisses cheese in 1970. This cheese, which originated in the Auxerois region in the heart of Burgundy, was created in the 16th century by Cistercian monks. These monks gave the knowledge of how to produce this washed rind soft cheese to the women of the region, which is why writings on the subject refer to “fermières” (lady farmers).

    Today the Fromagerie Gaugry still specialises in the production of Epoisses, and its successors perpetuate the familial and regional cheese making tradition while at the same time expanding and modernising production. They are the last cheese makers still producing raw milk Epoisses. Thus the Fromagerie Gaugry promotes one of the most flavoursome Burgundian cheeses thanks to their perfectly mastered know-how.

    We aim to complete all orders received before 9am for a next day delivery unless you have requested a different delivery date. Orders received after 9am will be prepared and dispatch the following day for a delivery the day after.

    Because most of our goods are perishable, your order will be packed in an insulated cardboard box filled with ice packs. We send goods by overnight carrier to destinations on the GB mainland only for a delivery by 16.00. We can deliver to your home or place of work, and to the home or work-place of your relatives, friends or colleagues. We must have a complete post code and telephone number for every delivery address. We can deliver on, Wednesdays, Thursdays and Fridays ONLY.

    Because most of our products are perishable, we highly recommend that you provide us with an alternative delivery instruction for any private address; such as "leave in porch/on step/with a neighbour/behind the bins". Please take great care when stipulating delivery locations, addresses and dates, because once these have been entered and you have received a confirmation email for your order, they cannot be changed.

    Please make sure your order is stored in refrigerated storage/fridge as soon as it has been delivered.
