The Edel de Cleron is the summer version of the Mont d'Or, except that the milk is pasteurised. It has an extremely mild and creamy texture and a mild earthy aroma. It is wrapped using a strip of pine bark which supports the cheese when ripe. In its pine box, you can either have it cold or warmed in the oven.
