Cous cous also known as Couscous is a dish of staple food of the middle east, it is a type of semolina that has a light, fluffy texture when cooked, It is traditionally served with a meat or vegetable dishes, couscous is a good source of fibre, protein and omega 3 & 6 fatty acids. It also contains vitamins including B3 & folate and minerals including copper, magnesium, phosphorus & zinc.
Couscous can be cooked and served plain or flavour with stock and any combination of fruits, vegetables, herbs and spices. It can be added to stuffings, or cooked with milk or nut milk to make breakfast dishes and a creamy pudding similar to rice pudding. Ground couscous can also be used as a flour substitute to make cakes and bread. Simple to prepare, in a bowl add 1 part couscous to 2 parts boiling water or hot stock, stir and cover with tea towel or lid and leave the couscous to fluff up. Undercover, stir, season and serve.
