This wonderful dark amber coloured juice comes from salted anchovies and is produced using a traditional process to marinate the anchovies. The preparation of Acquapazza's Colatura is simple and natural but follows strict rules that begin with fishing for the best anchovies in the Gulf of Salerno from March to July.
Once the anchovies have been gutted and salted they are closed in a special, traditional wooden barrels called 'terzigni'. During the marinade of the anchovies the liquid is collected and exposed to the sunlight. After 6 months the liquid pours through a hole in the bottom of the special chestnut barrel and is bottled and the Colatura is finally ready for your recipes. Acquapazza's Colatura is considered to be the best Colatura on the market thanks to the ageing period which produces such a rich and concentrated product and it can only be found in a limited number of specialist shops in Italy.

Acquapazza Gourmet produces small and precious amounts of Colatura following ancient and traditional methods, respecting the times needed for the maturation of the product, aged in chestnut barrels and obtained solely from anchovies caught in the Gulf of Salerno. The result is a unique product that will bring all the flavours and tradition of Cetara to your table.
Wonderful on pasta and very easy to recreate the traditional recipe for the sauce (just add some garlic, olive oil and parsley to 1 teaspoon per person of Colatura).
