Polenta is also known as cornmeal, it is a very versatile ingredient which can be used to make both sweet and savoury dishes. It contains fibre, protein and omega 3 & 6 fatty acids, vitamins including B1, B3, folate & choline and minerals including calcium, magnesium, potassium & selenium.
Did you know that in the past polenta was made from grains such as millet or spelt, chestnut floor and beans such as garbanzo bean? These days it is made from maize meal which is ground fine or coarse.
Polenta is a favourite dish of Northern Italy and is used in countless recipes across the world including Europe, North & South American, Africa and the Caribbean.

Preparation and Usage:
Polenta can be served in a similar way to mashed potato, it can be cooked like porridge, baked into breads and cakes, made thick it can be sliced and fried and served with tomato based sauces, it can also be baked and grilled. To cook, bring 3-4 parts water or milk to the boil (dependant on how thick you want your finished polenta to be) in a saucepan and slowly stir in 1 part polenta, keep stirring until the polenta is thick and creamy, this should take about 5 minutes, once cooked, stir in a knob of butter, season and serve.
