Harvest: First half of September
Vinification: Grapes are handpicked and transported in small crates which are place in cold storage for 24 hours. Grapes are then de-stemmed and gently pressed in a pneumatic press followed by static debourbage. Alcoholic fermentation in stainless steel tanks at controlled temperatures of 12-14°C, lasting approximately 15 days.
Ageing Potential: 1-2 years
Tasting Notes: Bright white-yellow colour with grey highlights. A delicate wine with aromas of green fruits with pear, lime and white peaches dominating. Full in the mouth, crunchy acidity which lasts to give a pleasing aftertaste.
Food Pairing: Perfect match for grilled chicken or fish, pasta dishes with white sauces and yellow cheeses.
