Golden Cross goats cheese is a log shaped goat’s milk cheese which can be eaten fresh or matured, we like to age this cheese in house. Coagulation takes 24 hours before the curds are gently ladled into long moulds to form the log shape.
The cheeses are lightly charcoaled prior to maturation when a velvety white penicillium mould develops on the surface leaving a creamy, sharp centre.
The cheese has won numerous awards over the years including the James Aldridge Award for the Best British Raw Milk Cheese and, most recently, The Best Soft Cheese and Best Raw Milk Cheese at the 2017 Artisan Cheese Awards and 2 Gold medals at this year’s Royal Bath and West British Cheese Awards.
