The belly is buttery and smooth in flavour, during the smoking process it’s protected from the wind by the ribs, never being in direct contact with the smoke, it’s particularly mild and delicate. The slices are long and meaty and will melt in your mouth. The fillet is smoky on the outside with a tender heart, the most precious part of the salmon.
Our salmon is freshly smoked in our Smokery on Daylesford Farm within 48 hours after it has been fished. Supplied by the prestigious Loch Duart Salmon company in Scotland. Our process is 100% plastic free and pared back to only the essential ingredients; salmon, salt and smoke.
The belly fillet weighs 600g, it’s ideal for 6/7 people.
