9 Year old Guyanese rum from the Diamond distillery, bottled by That Boutique-y Rum Company - however, it's a little different to the previous Boutique-y bottling of Diamond's rum. That one was distilled using the wooden Versailles still, while this one was distilled using Port Mourant the double wooden pot still! Very interesting to see the different in flavour profile imparted by these stills, despite coming from the same distillery.
Batch 1 is a release of 461 bottles.
Nose: Through ripe banana notes and floral vanilla there’s plenty of sea salt and earthy molasses. A thick, cake-mixture aroma forms around a slowly developing core of robust oak spices.
Palate: Many of the flavours from the nose continue on the palate, but with the addition of melting butter and roasted fruit. Red chilli chocolate brings complex sweet notes and heat among a little engine oil aspect.
Finish: Sparkling molasses adds sweet spice to a long and defined finish.
Overall: A delicious diamond of a rum that would work wonderfully in a Mai Tai.
