Our Paleta Serrana comes from pigs reared in the province of Aragon, then the shoulders are cured in natural dryers in Huesca, a region with centuries of tradition in the curing process of meats. All shoulders are cured until they are perfectly ready, with a minimum curing time of 7 months.
About Nitrates and Nitrites
Nitrites and nitrates are essential for both ensuring meat is cured fully and properly and also for allowing the complex flavours to develop. Much like sulphite is a natural and important part of wine-making - nitrites do the same job for charcuterie. They exist in minuscule quantities and so long as you don't consume mountains of cured meats every single day then you can rest assured that consuming our meats will only provide you with positive health benefits such as a strong heart and a powerful mind.

We can only offer a next day delivery service to a UK mainland address. We offer a 24h courier service which includes a trackable service. The courier company will attempt to deliver your parcel the next working day. Signature on delivery will be required. If no-one is in or if the courier cannot gain access, they will try to deliver it to a neighbour. If the delivery is unsuccessful, the driver will leave a card with instructions to contact the courier company.
