The most exceptional Comte, matured for 36 to 42 months, is full of crystals and crunchy with a strong and sharp after taste. Only a small chunk will give you a burst of long lasting flavour. You can easily pair it with some truffle honey.
Comte is a cheese of concentrated flavour, with brown-butter and roasted nut aromas and a sweet finish. Jura wines from Comte's home region are a classic pairing for this unique cheese. This Comte has won more medals than any other any Comte at the Prestigious 'Concours General Agricole' in Paris, but also a Super Gold medal at the world cheese awards!
