La Raclette is a mountain cheese made with both whole, unpasteurised milk. Half the wheel is traditionally melted over a fire and scraped over potatoes and charcuterie. It is a wonderful cheese which liberates all of the raw milk flavours from mountain pastures. It’ll warm your cold winters!
