Recipe: Walnut & Goats' Cheese Bruschetta with Salted Caramel Figs

Ingredients
- 250ml Jersey Salted Caramel Sauce
- 200g Farleigh Wallop goats' cheese
- 50ml walnut oil
- 4 just-ripe figs
- Rosemary to garnish
- 1 small loaf or 2 large loves of sourdough bread (or another bread of your choice, suitable for bruschetta)

Instructions
1 Cut the bread into 1.5 cm slices and then cut into pieces that will fit a slice of fig on top.
2 Brush each side of the bread with walnut oil and bake at 180 degrees (160 fan) until just brown.
3 Add a thin slice of the cheese onto bruschetta, or spread if soft enough.
4 Slice the figs and place a piece on each bruschetta. Brush or spoon half a teaspoon of Jersey Salted Caramel Sauce on to each fig and grill until just caramelised.
5 Serve on a platter with a little more drizzle of warm caramel if desired and scatter with rosemary.
