Recipe: Sweet Delight Coconut Macaroons
Crisp on the outside, chewy in the middle — a really good coconut macaroon is a thing of beauty. And with touch of Spice Sanctuary's Sweet Delight organic spice blend with cinnamon, cardamom, fennel, ginger and nutmeg, it's an absolute delight!
Ingredients
- 2 cups shredded unsweetened coconut
- ¼ cup honey
- 1-2 tsp Spice Sanctuary Sweet Delight Spice Blend
- 3 egg whites
- Good pinch of sea salt
- Dark chocolate
- 1 tsp coconut oil

Instructions
1 Preheat the oven to 325F / 160C / Gas Mark 3. In a mixing bowl combine together the coconut, honey and spice blend.
2 In another bowl, whisk the egg whites and sea salt until hard peaks form.
3 Gently fold in the egg whites into the coconut mixture using a figure of eight movement.
4 Using an ice cream scoop place small mounds of the coconut mixture onto baking parchment and bake for 15-20 minutes until lightly browned.
5 Remove from the oven and allow to cool.
6 Place a few pieces of dark chocolate and the coconut oil in a bowl and melt in the microwave or on the stove.
7 Generously drizzle the chocolate sauce over the macaroons. Allow to cool and enjoy! Keep refrigerated in airtight container for up to a week.
