Recipe: Roast Aubergine Soba Noodle Salad
Creating a healthy meal that's bursting with flavour doesn't have to be complicated. This beautifully fresh roast aubergine and soba noodle salad made with Lucy’s Authentic Asian Dressing makes a gorgeous dinner or even a fantastic lunchbox, and is super easy to make! Just pack everything up, take to work and throw the dressing on when you're ready to eat.
Ingredients
- Lucy’s Authentic Asian Dressing
- 250g soba or udon noodles
- 1-2 tbsp olive oil
- 1 large aubergine
- 1-2 tbsp soya sauce
- A bunch of spring onions
- 1 Red Chilli
- A handful of fresh coriander

Instructions
1 Preheat the oven to 180°C.
2 Cut the aubergine into chunks and toss in a large bowl with the olive oil and soya sauce.
3 Pour into a roasting tin and cook for approx. 20-25 minutes, flipping halfway through cook time.
4 Meanwhile, cook the noodles according to packet instructions.
5 Once ready, drain, rinse with water and put into your serving bowl.
6 Take the cooked aubergine out of the oven and add to the noodles.
7 Finely chop the spring onions, coriander and chilli.
8 Set half the coriander aside and throw the rest along with the spring onions and chilli to the noodles and aubergine.
9 Stir in Lucy’s Authentic Asian Dressing
10 Finish with the rest of the coriander.
