Recipe: Vegan Coconut Crunch Date Balls

Effortlessly simply but brilliantly tantalising — these fantastic little treats are perfect for when you're craving something sweet but don't want to hit the refined sugar. Thanks to the good people at Conscious Chocolate for this recipe. Their vegan chocolate bars are entirely hand made, hand wrapped, and packed with goodness!
- 6 medjool dates, pitted
- 1/2 bar of Organic Coconut Crunch Chocolate
- 2 cups desiccated coconut and extra for rolling (you will make enough coconut butter for more than one serving)

1 Place 1 ½ cups of desiccated coconut into a high speed food processor or blender and blend for around 10 minutes then add in the remaining ½ cup of desiccated coconut, table spoon by table spoon and stop if the coconut butter starts to crumble.
2 Melt your chocolate in a pan on a low-medium heat and set a side to cool.
3 Stuff the centre of the dates with your homemade coconut butter and roll them into balls. Take your melted chocolate and cover the dates in the warm melted goodness. Finally add a sprinkle of desiccated coconut then place them in the fridge to set.
