Recipe: Super-Easy Seaweed Pesto
It's so easy to whizz up this delicious pesto — packed with flavour and bursting with goodness from the nutrient-rich kombu seaweed. Huge thanks to The Cornish Seaweed Company for introducing us to this gem of a quick-fix recipe.
Ingredients
- 50g Nuts (of choice)
- 20g Organic Kombu Seaweed
- 60g Fresh Basil Leaves
- 20g Grated Parmesan
- 6 Tbsp Olive Oil
- 2 Cloves of Garlic
- Black Pepper

Instructions
1 Chop the seaweed into small pieces.
2 Toast the nuts for a few minutes in a dry pan on a low heat.
3 Place all ingredients in a blender or pestle and mortar and blitz or bash until required consistency.
4 Season with black pepper.
5 Get eating! Stir into freshly-cooked pasta, spread onto a crusty baguette or swirl into creamy hummus and get dipping with toasted pitta chips.
