Recipe: Healthy Tiger Nut Shortbread

We all love an afternoon biscuit, but it doesn't have to be unhealthy with these delicious, gluten-free, refined-sugar-free, vegan shortbreads. They are made with super-versatile tiger nut powder and tiger nut milk, so you don't have to worry about any nasties.
1 Combine ingredients using fingers.
2 Place on board, cover with clingfilm and roll lightly.
3 Cut into shapes using a cookie cutter.
4 Bake in an oven at 160 C / 325F (10-15 minutes) until brown. Allow to cool and crisp up.
