Preheat your oven to 180c and line a loaf tin with baking paper.
To make the banana bread, add the bananas, honey and coconut oil into your food processor and blend until everything is well mixed.
Crack in the egg and blend again.
Next, sift the dry ingredients and pour these into the food processor. Blend everything together, until you’re left with a smooth cake mixture.
Pop this into your lined tin and bake in the oven for 35-40 minutes. Test to see if the cake is ready by piercing it with a skewer or cake taster to see if it comes out clear.
Place the cake onto a wire rack and allow to cool completely.
Meanwhile, to make the icing, blend together the coconut cream, cashews, honey and matcha to create a completely smooth and creamy frosting.
Once your loaf is cooled, pour over the frosting and decorate.
