Recipe: Gluten & Dairy-Free Matcha Green Tea Banana Bread

Got some over-ripe bananas making your fruit bowl look sad? Whip up some of this delicious banana bread and everyone will be happy! Huge thanks to Bloom Teas for this gorgeous recipe.
- --- For the Bread: ---
- 2 small bananas
- 4 heaped tbsp honey
- 1 whole egg
- 3 tbsp coconut oil
- 1 1/3 cup brown rice flour
- 1 tsp baking powder
- 1/3 tsp bicarb
- 1 tsp vanilla powder
- Pinch of salt
- 1 heaped tsp Bloom Teas Matcha powder
- --- For the Icing: ---
- 3 tbsp thick coconut cream
- 1/2 tsp Bloom Teas Matcha powder
- 2 tbsp honey/maple syrup
- 1/2 cup cashew nuts
- Rating: Medium
1 Preheat your oven to 180c and line a loaf tin with baking paper.
2 To make the banana bread, add the bananas, honey and coconut oil into your food processor and blend until everything is well mixed.
3 Crack in the egg and blend again.
4 Next, sift the dry ingredients and pour these into the food processor. Blend everything together, until you’re left with a smooth cake mixture.
5 Pop this into your lined tin and bake in the oven for 35-40 minutes. Test to see if the cake is ready by piercing it with a skewer or cake taster to see if it comes out clear.
6 Place the cake onto a wire rack and allow to cool completely.
7 Meanwhile, to make the icing, blend together the coconut cream, cashews, honey and matcha to create a completely smooth and creamy frosting.
8 Once your loaf is cooled, pour over the frosting and decorate.
