Recipe: Bulgur Wheat & Banana Breakfast Bowl

It's getting colder and we're craving something warm and comforting to take the edge off those chilly mornings. Bulgur wheat is a fantastic source of vitamins, minerals, fibre and protein, and since it's still delicious cooked with water, it's the perfect low-fat alternative to a milky porridge. Plus it has a low glycemic index, which is great for your blood sugar level. Thanks to Artisan Grains for sharing this recipe with us. - 1 cup of cooked Artisan Grains Bulgur Wheat
- 1/4 cup Greek Yogurt (or dairy-free / low-fat alternative)
- 1 tsp of honey or agave
- ½ tsp of cinnamon
- 1 tbsp of brown sugar (optional)
- 1 banana cut into slices
- 1/3 cup of chopped walnuts
- Additional cinnamon and brown sugar for sprinkling on top
- Prep: 10 minutes

1 Cook the bulgur wheat according to package instructions or until tender. You can set aside to cool and serve cold (this can be done the day before, ready for the morning), or serve warm.
2 Mix the yogurt, honey and cinnamon in a small bowl.
3 Add the walnuts and brown sugar to the bulgur wheat and mix together.
4 Top the bulgur wheat with banana slices and spoon the yogurt mixture over the top.
5 Sprinkle with additional cinnamon and serve.
