Recipe: Cumberland Salami Potato Salad

A picnic classic with a twist — a rich, uniquely British salami perfectly compliments fresh salad potatoes with zesty capers and a piquant mustard vinaigrette. Thanks to Woodall's for introducing us to this recipe and to their delicious Cumberland Salami — a superbly different taste experience to continental charcuterie. Potato salad will never be the same again!
For the Vinaigrette:
1 Cook the potatoes in their skins in salted water for 10-12 minutes until tender. Drain and rinse under cold water, then leave to dry.
2 Slice the potatoes into similar sized pieces, place in a large bowl with the salami and the chives, parsley, dill and capers.
3 For the vinaigrette, whisk together all the ingredients, seasoning to taste with the salt and pepper. Gently mix with the potato and salami.
4 Sprinkle with sea salt and serve.
