Patrick O'Connor (Paddy) founded PJ Kombucha, a local Kombucha company based in Hockley, Birmingham in 2016.
PJ Kombucha is 100 per cent independent and family run, producing each bottle in house. Every batch is brewed and tasted by myself prior to release. With over 5 years experience producing Kombucha and a background in scientific research, I have perfected our brewing methodology, that is based on ancient Kombucha brewing techniques. We aim to produce the purest Kombucha, that is light and clean, without an overpowering vinegar punch.
We do this by excluding any heavy filtration, finnings or pasteurisation from our production, which strip out the yeasts and bacteria in Kombucha to extend the shelf life of the product. We aim to use our products to help educate the UK on kombucha, gut health and the microbiome, using credible information from third party testing, professionals and peer reviewed scientific papers. This is why we are currently working with Birmingham University and are endorsed by Nutritionist Sarah Grant, from Gut Reaction.
Through every sale PJ Kombucha supports a NPO, called the Black Mamba Anti-Poaching Unit (BMAPU) in South Africa. The BMAPU is an all female anti poaching unit, that takes and non gun approach to the poaching problem in South Africa's Kruger National Park. These women patrol the parks, educate locals and help to fight unemployment in their local communities.
